Fruit Kabobs in a Pineapple

Fruit Kabobs in a Pineapple

Are you ready for some FUN?

Queue some mellow Hawaiian tunes and pass the Kahlua pork!

These fruit kabobs in a pineapple are a great option anytime you want to serve fruit in a fresh, fun new way.   One of the more popular dishes at our last luau, your guests will love it.   Use a wide variety of fruit, in a festive range of colors including:

Cantaloupe

Pineapple

Watermelon

Strawberries

Kiwl or Honey Dew Melon

Mandarin Oranges

And it couldn’t be easier.  Start by cutting off the tops of your strawberries, like this.

Fruit Kabobs in a Pineapple

Next, cut your fruit into 1 inch bite-size pieces and place in bowls.  Then slice off the bottom of a pineapple so it will stand upright solidly, like this.

Fruit Kabobs in a Pineapple

Finally, simply thread your fruit onto the skewers and insert into the pineapple at an angle all around the pineapple in 4 rows.   I made this pineapple with 12 skewers for an Eclipse party we recently held.

It tastes every bit as great as it looks.

An AlohaDreams.com recipe.

Course: Side Dish
Servings: 24 servings
Author: Betsy Edwards
Ingredients
  • 1 pineapple (for the center piece, not for the kabob pieces)
  • 24 wooden skewers
  • 24 pieces watermelon
  • 48 strawberries (Note: Get 3 pounds. Each pound of strawberries = about 18 strawberries)
  • 24 pieces cantaloupe (1 cantaloupe)
  • 24 pieces mandarin oranges (1 can or small jar)
  • 24 pieces pineapple (1 whole pineapple will yield about 6 slices with 6 pieces per slice to total 36 pieces)
  • 24 slices kiwi fruit or 24 pieces honeydew melon (About 6 slices per kiwi, so get 4 kiwi)
Instructions
  1. Cut the bottom off the pineapple so it sits flat on a plate.
  2. Cut the fruit into 1-inch, or bite-size, chunks.  Trim the leaves off the strawberries, but do not core them.

  3. If using wooden or bamboo skewers, make sure all the splinters are off of them by rolling two together in your hands, or rub them over each other, as if you are sharpening a knife.
  4. Skewer the fruit on the skewers, alternating fruit types and colors on each stick.

  5. Make sure to insert the skewers into the pineapple angled up, so the fruit don't slip off the end.

MAKE AHEAD NOTE:
  1. Pineapple Kabobs can be made earlier in the day for serving the same day.  For best results, I would not make them the day prior

Huli Huli Chicken

Huli Huli Chicken

This is without a doubt one of the Best. Chicken. Recipes. Ever.

We fixed this for our luau last year.  I figured out of the 140 guests there had to be some folks who didn’t like roast pig.  I couldn’t imagine who, but I knew there had to be someone.  So we made 70 pieces of Huli Huli chicken to supplement the roast pig.  Turns out no one doesn’t like roast pig.  But NO ONE wanted to skip the chicken either.

I.  Ran. Out.

I NEVER run out of food.  Never.

Well, I ran out of Huli Huli chicken.  In the midst of all this luau goodness, EVERYONE WANTED THE HULI HULI CHICKEN.

Did I mention this is a great recipe.  You have to try this one before the summer’s over.  Find any excuse, but make this chicken.  You’ll love it.

Huli Huli Chicken

Huli-Huli Chicken is a quintessential Hawaiian dish.  It was created in 1955 by Ernest Morgado of Pacific Poultry.  Ernest barbecued his version of teriyaki chicken for a farmers gathering.

The chicken was such a hit, its popularity spread and it eventually became a favorite food for Hawaiian fundraisers.  It’s still often used by schools, softball teams and hula halau (hula groups) to raise money.  Huli Huli chicken is typically cooked between two grills or on a large rotisserie.  The grills are flipped over repeatedly to allow the chicken to cook evenly on all sides. And since huli is the Hawaiian word for turn, it became known as Huli-Huli Chicken.

If you’re ever on the Big Island, you owe it to yourself to check out GJ’s roadside Huli Huli chicken stand.  I promise you the smell alone will pull you over.  You can read all about GJ’s Huli Huli chicken here.  It’s amazingly good.

Huli Huli Chicken

There are several secrets to great Huli-Huli chicken.  First of all you need to marinate your chicken for at least an hour and preferable longer, but don’t exceed 8 hours or it will be too salty.  Secondly, use thighs – they are much less likely to dry out than breasts and they are more flavorful.  Third, apply the glaze right before you remove the chicken from the grill.  There is a lot of sugar in the glaze and if you apply it any sooner, the chicken can easily burn.

Huli Huli Chicken

To make cooking your chicken, steaks or any meat on your grill or oven a worry-free event, consider using one of these cool tools:

""

It will only take you seconds to get this sleek Bluetooth thermometer up and running.  It reports accurate readings on your smart phone up to 100 - 150 feet from its base.   From the moment your meat is placed in the oven (or grill) to the second it reaches the perfect temperature, the iGrill has your back.  Insert the temperature probe(s) into your meat and track the doneness of your food from your smart phone on the Weber iGrill app, without having to lift the lid.   It comes with 2 probes and you can order 2 more, for a total of 4!  And you can use it for everything including chicken, steak, burgers, pork roasts.  You'll love it for baking chicken because you'll know exactly when the chicken is done so it doesn’t get dried out.  It's the reason my dishes come out at just the right degree of done-ness time after time!

Fourth, don’t forget to huli the chicken.  And if you have an mesquite chips, now’s the time to bring them to the party.  In Hawaii they use kiawe (pron. key-AH-vey) wood, a tree from the mesquite family.  These are kiawe trees.  Don’t sweat it if you don’t have mesquite chips, it will be WONDERFUL even still.

Finally, feel free to invite us over.

Like all my chicken grilling recipes, this recipe calls for basting at the end of grilling. That's especially important in this case because the sugar in the glaze will burn easily if you apply it any sooner. Also, don't increase the chili-garlic sauce amount. It is very potent.
Course: Main Course
Cuisine: Cooking for a Crowd
Servings: 100 servings
Author: Betsy Edwards
Ingredients
For the Chicken Brine
  • 16 quarts water
  • 16 cups soy sauce
  • 16 tablespoons vegetable oil
  • 2 cups minced garlic from a jar
  • 4 tablespoon grated fresh ginger from a jar
  • 100 chicken thighs
For the Chicken Glaze
  • 4 ½ (46 ounce) cans pineapple juice
  • 3 cups light brown sugar packed
  • 3 cups soy sauce
  • 3 cups ketchup
  • 3 cups rice vinegar
  • 1 1/3 cup minced garlic from a jar
  • ¾ cup grated fresh ginger
  • 1 teaspoon chili-garlic sauce
Special Equipment
  • 3 (approximately 54” x 29”) gas grills or 1 grill which will accommodate 100 thighs
Instructions
To Brine the Chicken
  1. In a large bowl, combine water and soy sauce in large bowl. Set aside. In a large skillet, heat oil over medium-high heat until shimmering. Add garlic and ginger and cook until fragrant, about 30 seconds. Stir into water/soy sauce mixture. Add chicken and refrigerate, covered, for at least 1 hour and up to 8 hours. Go for the full 8 hours if at all possible, but no more than that or the chicken will get too salty.
To Make the Glaze
  1. In a medium sauce pan, combine the pineapple juice, sugar, soy sauce, ketchup, vinegar, garlic, ginger, and chili-garlic sauce. Bring to a boil then reduce heat to medium and let simmer until glaze is thick and syrupy about 20 to 25 minutes. This should result in about 12 cups of glaze.
To Grill the Chicken
  1. For a kettle grill: open bottom vents on grill. Light about 75 coals. When coals are covered with fine gray ash, spread evenly over bottom of grill. Set cooking grate in place and heat, about 5 minutes. For a gas grill: heat all burners to medium-low. Scrape and oil cooking grate.
  2. Remove chicken from brine and pat dry with paper towels. Arrange chicken skin-side up on grill. Grill, covered, until chicken is well browned on bottom and meat registers 120 degrees, about 25 to 30 minutes. Flip chicken skin-side down and continue to grill, covered, until skin is well browned and crisp and meat registers 170 to 175 degrees, 20 to 25 minutes longer. Apply glaze several minutes before removing chicken from grill.
MAKE AHEAD NOTE:
  1. You can make the chicken to this point up to 2 hours before serving. Transfer to a large disposable aluminum serving tray, cover with foil and hold in a 200 degree (warm) oven.

Recipe Notes

NOTE: Do not exceed approximately 36 - 40 thighs on a standard size gas grill. Many more than that and they will render so much fat that you can easily have a grill fire. Not good.

Easy Island Fried Rice for a Crowd of 75

Easy Fried Rice

I developed this recipe because EVERY ONE loves Fried Rice and I desperately wanted Fried Rice for our Luaus.  But neither you, nor I, nor any of my dear, long-suffering friends are interested in spending hours in front of a hot wok, cooking 20 or 30 batches of fried rice.  Ain’t gonna happen.   SO – I came up with this quick and easy version of Fried Rice.  Here’s the secret: it’s not actually fried.  The ‘fried’ look and taste is supplied with sesame oil and soy sauce. The usual ‘add-ins’ of carrots, peas, and scrambled eggs further contribute to the sense that you’re enjoying fried rice.

Is it the recipe I use when I’m fixing dinner for less than 20?   Nope.  Is it a darn good alternative for 100 – 400?  Absolutely.  In fact, I had enough compliments and recipe requests, that I’ve included a “Family Size” version as well.   It’s one of the more popular side dishes at our luau.  Let me walk you through the steps to make it.

So how DO you cook rice for a large group?

The absolute best way to easily cook rice for a crowd is in the oven.  It’s a fool-proof, hands off method that turns out perfect rice every time.  The first time I tried it, I checked the rice about 10 minutes prior to the completion of the cooking time.  It was still slightly crunchy – and with guests due soon I was getting concerned (it does happen, I just try never to show it).  But I steadfastly replaced the aluminum foil and said a small prayer.   When I removed the rice from the oven 10 minutes later – it was perfect.   It’s turned out perfect every time I’ve made it.  Just check a spoonful from the center of the pan before you remove it from the oven and if it’s not quite done, cover it back up and let it go 5 – 10 more minutes.

How much rice do I need to feed a large crowd?

Let’s talk about this one for a minute.  Generally, most rice will triple when cooked, so 1 cup of raw rice will yield cups cooked rice.  This means if you start with 12 cups (5 pounds, 4 ounces) of white, long grained, uncooked rice, you’ll wind up with 36 cups of cooked rice.  For this recipe you’ll be adding in 4 more cups of ham and about 4 cups of vegetables which will give you about 44 cups total.  Since an average serving size is about 1/3 cup – 1/2 cup, this gives you between 88 – 132 servings per pan.  I just made 2 (20 x 13 x 3) pans of this rice for our luau this past weekend.  We served 141 people with enough leftovers to have served 175 – 200 with the 2 pans.  You can easily count on 1 pan of this rice serving 75 people.   I would even be comfortable planning to handle 80-90, and possibly even 100 people, since not everyone will take some.   But rice is cheap, and so 75 is what I use for planning.

By the way – you can make many versions of this:  Spanish Rice by adding pureed tomatoes, corn, oregano and green chilies or even simple plain white rice by omitting any of the add-ins with this recipe.   You can also add some diced spam if you want to make it authentic Hawaiian.  Like shrimp, chicken or pork?  Go for it.  As for the veggies, nothing’s easier than a frozen package of peas & carrots!

This rice for a crowd recipe is SO much easier than worrying about the rice overcooking and burning on the stove top.   Keep it, uncovered, in a warm 200 degree oven and it easily retains its heat for up to an hour.  I’m officially in love.

Easy Fried Rice

Some Secrets to Success

Easy Measuring Tip

Here’s a helpful hit when you measure the rice:  It’s just as easy to dump the rice in the pan in discrete piles as it to throw it in casually.  That way when you’re done, there’s no question as to the number of cups of rice you’ve add to the pan.

Your rice needs to be mixed thoroughly

Cooking rice in this quantity makes it difficult to effectively mix in the soy sauce and other ingredients.  Once cooked, the rice takes up most of the space in the large roasting pan.  If you’re not careful, you end up with clumpy, gummy rice.

The last time I served this, I was in a hurry and wasn’t able to easily, quickly and thoroughly mix in the soy sauce.  I ended up serving a pan of “fried rice” with large unappetizing pockets of plain white rice.  To add insult to injury, I had to transport the rice about 15 minutes the church for serving.  Because I was short on room, I stacked several large, heavy pans on top of the rice pans, which turned the rice into a gummy block.

I can tell you the 200 teens were very excited with the prospect of fried rice as part of a Chinese dinner.  They were less enthusiastic with my sub-par offering.  Fortunately, they have been taught the importance of kindness…

Use an additional pan for mixing and break up all rice clumps by hand

To keep our reputations intact, I’ve found a very effective solution:

1.  Simply pick up an extra aluminum roasting pan so that you have 2 total for each recipe.  Once the rice comes out of the oven, remove half of it to the second pan.  Evenly divide the soy sauce, sesame oil, eggs and meat between the 2 pans.  Toss to mix well.  Simply take a couple forks or serving spoons and fluff it to break up any larger clumps and cool it down so you can handle it, then break up all chunks by hand.  The rice should retain its temperature well, but you can always put it, uncovered, in a 200 degree oven to re-warm it if necessary.

2.  If you’re transporting this rice after cooking it, make sure you don’t stack anything on it.

3. Fluff it right before serving.   Since you have now divided the rice between 2 roasting pans, this gives you enough room in the pans to easily fluff it.

A great side dish for your next luau, girl's camp, youth conference or family reunion.  Makes 44 cups. Yields roughly 75 - 100 servings.

Course: Side Dish
Servings: 75 servings
Author: Betsy Edwards
Ingredients
  • 12 cups white rice, long grain UNCOOKED - NOT minute or instant (This is 5 pounds, 4 ounces of uncooked rice)
  • 2 white onions chopped
  • 1 (16 ounce) bag frozen peas & carrots
  • 4 tablespoons minced garlic
  • 2 quarts water
  • 3 quarts chicken broth
  • 8 large eggs
  • 2 cups soy sauce
  • 1/2 cup sesame oil
Optional:
  • 4 cups cooked ham diced – or 2 cans spam, diced
Special Equipment
  • 2 (20" x 13" x 3") disposable aluminum pans (this is a full-size steam table pan)
  • 2 large flat baking sheets
Instructions
  1. In a large stock-pot, combine water, broth and salt. Bring to a rolling boil.
  2. Meanwhile, preheat oven to 350-degrees. Lightly spray a 20" x 13" x 3" roasting pan with cooking spray.  Tear off a large sheet of aluminum foil large enough to easily cover the top of the roasting pan.   Set aside.

  3. Place 12 cups UNCOOKED rice, chopped onion, frozen carrots and peas and minced garlic in roasting pan, spread evenly.  Place roasting pan on flat baking sheet for stability when transporting to and from the oven.

  4. Once water and broth is boiling, pull out the oven rack and move the roasting pan on the baking sheet to the extended rack.  Carefully pour the boiling liquid over the rice and stir to mix thoroughly.

  5. IMMEDIATELY cover tightly with aluminum foil.  Using oven mitts (it's hot), press foil tightly around the pan to ensure a tight seal around ALL the edges, crimping along edges.  Carefully slide the rack back in the oven and bake for 45-50 minutes or until rice is tender.

  6. 15 minutes before rice is done, in a medium sauté pan over medium heat, cook meat if including.  When meat is browned and cooked, whisk eggs, add to pan and scramble eggs for several minutes.

  7. Test the rice for doneness and when done remove from oven and remove foil.  Scoop out half of it into the second disposable aluminum roasting pan.  Evenly divide the soy sauce, sesame oil, eggs and meat between the 2 pans.  Toss to mix well.  Simply take a couple forks or serving spoons and fluff it to break up any larger clumps.  Then, when it's cool enough to handle, break up the rice with your hands.   The rice should retain its temperature well during this process, but you can always put it back in the oven at 350 for about 20 minutes to re-heat if necessary.

MAKE AHEAD NOTE:
  1. Can be kept warm in the oven, covered with foil, at 150 degrees or put in a covered slow cooker on LOW. Add a little water if necessary to keep from drying out.

  2. Make sure to 'fluff' the rice immediately prior to serving.

Recipe Notes

NOTE 1: 12 cups of uncooked rice cooks up to 24 cups of cooked rice.  You'll be adding in Then you’re adding 9 cups veggies, for a total of 33 cups. If everyone took 1/2 cup, this would technically serve only 66 people. In reality the average person will take 1 large serving spoon full, which is between 1/3 and 1/2 cup and not everyone takes some – so you end up with plenty for 75.

NOTE 2:  It's important to select a roasting pan which holds 15 quarts to allow plenty of room for rice expansion. The 3 inch deep "full size" disposable steam pan enables the rice to cook more evenly.

Let’s Luau!

The sun is setting and the tiki torches are on fire.  The weather is invitingly warm.  The very essence of old Hawaii is in the air.  Better than taking a walk on a green sand beach with your love (well, almost), this luau conjures up images of Trader Vic’s, Elvis and every tiki bar worth its puffer fish.  It is SO on.  WE ARE HAVING A LUAU!

Luau Party Ideas and Recipes

Want to plan a luau for 20 – 200 people?  If you want to create a wonderful, over-the-top luau they’ll be talking about for years – you’re in the right place.   Here’s everything you need from the menu and recipes to retro tiki decoration and fun activities.

But before we start, let’s get you in the Right Frame of Mind …

First, press ‘Play’ …

… now isn’t that much better?

Nothing like the Hawaiian War Chant to get your tiki juices flowing.  (How can you not love a culture whose war chant sounds like this.)  Next go grab a fruity drink, kick off your flip flops (they call ’em slippas in Hawaii) and read on for everything you need to host the MOST AMAZING LUAU EVER!

Your Luau Poster & Invitations

Your luau invitations and posters are the first peek your guests will have of the fun you have planned for them.  Looking forward to an event is a large part of the fun of any event.  Just like it’s important to create a sense of excitement and place with the entry to your house, your printed material helps set the stage for your party and starts everyone’s tiki juices flowing.  Let’s turn up the excitement and give everyone their first hint of just how great a party this is going to be!

Here’s How

I use Vista Print for my posters and postcards.  Their interface is easy to use and their prices are reasonable.  I generally order one or two (2 foot x 3 foot) posters and 500 postcards.  (I’m a “the more, the merrier” kind of gal when it comes to guests…)  Here’s the poster and postcard for my latest Luau invite along with the images I used to create them.

Food Signs

While we’re about it, another thing you’ll want are food signs.  These give your guests an idea of what they’re eating and the Hawaiian names just add to the tiki fun.  I make one for each item on the buffet for each side of the table.

Luau Party Ideas

Your Luau Menu

Guests come to a Luau expecting fabulous food.  That includes great variety and abundance – after all, a luau is a feast!  Add-in an over-the-top retro Hawaiian tiki vibe and you’ve got yourself a winner.  Forget the time-worn Hawaiian Haystacks.  You can do so much better.  Serve all of the items on this menu or pick and choose your preferences.  We had 170 people at our last luau.  Since there was no way I was going to cook all that food myself, I simply assigned most of the dishes out to our church members.  That’s the easiest way for you to do it too.

Here’s How

It's easy!  Just follow these 3 simple steps:

1.  Send your volunteer a link to this page.

2.  Tell them which item to make,

3.  And how many batches.

That's it.

By the way, most of recipes below have family-sized recipe versions as well

- or better yet, make a big batch and freeze!

The Stars of the Show

You’ve got a number of options on the meat.  There is nothing like a whole roast pig.  And it’s really not that hard.  I’ll walk you through it if you’re up to it (and even if you’re not, you’ll enjoy my pig procurement story).   At the last luau, I made up 80 chicken thighs in case someone didn’t want Kalua pig.  Guess what?  Not only DID they want pig, they wanted chicken too!  For the first time forever, I ran out of  food – in this case the “back-up” Huli Huli chicken.  You really gotta include this chicken, and if you serve pork as well, plan on most people pretty much everyone taking some of both.

Luaus really ARE all about the food.

Set up Dessert Tables

I like to set up several dessert tables around the party area.  It gives people the fun of finding unexpected new delicious things to eat and encourages them to move around and mingle.  I have volunteers plate the desserts on individual dessert plates and set out forks and napkins on each table.

Your Luau Tunes

Music is the energy of any party.  Want to turn an average event into something special?  Make sure you have great music.  The best event without the right background music will fall way short.  You gotta have tunes!  Here is a fabulous family-appropriate playlist guaranteed to add over-the-top energy to your luau.  You could always buy a kitchy Luau CD, but this playlist is the perfect mix of wonderful up-beat high-energy songs, nostalgic retro beach tunes, and wonderful iconic Hawaii music.

Be sure and listen to Ku’u Lei Lu’u Ipo and Ka Uluwehi O Ke Kai by Hapa.  “Ku’u lei” literally means “my lei”, and it’s a metaphorical way to refer to your beloved.  Ku’u is an affectionate form of ko’u or ka’u and means ‘my’ in the Hawaiian language.  Ipo means sweetheart, darling, or my love.  By the way Ku’u Lei Lu’u Ipo is featured on one of my Virtual Romantic Vacation pages.  If you need a quick break, it’s a great quick escape to paradise.

Flower Lei Greeting

Let’s get this party started!   And there’s no better way to transport your guests to Hawaiian than with their own festive lei.  We have our beautiful young women stationed at each entrance to the luau greeting our guests with a colorful fabric flower lei.  Oriental Trader has a great selection of flower leis.  To help the young women feel that Aloha spirit, we give them each a pretty flower hair clip.  They love them!

Do the Haka!

The haka is a traditional war dance or challenge of the Maori people of New Zealand.  The New Zealand national rugby union team, the All Blacks, perform the haka before their international matches.  Some non-New Zealand sports teams, such as the BYU football team, have also adopted the haka for use before games.  The haka is a sign of respect for the performer’s ancestors and for the performer’s opponents.  It shows the team is prepared to do whatever it takes.  Certainly my motto.

The haka is a TERRIFIC ADDITION TO YOUR LUAU.  We had 20 young men from our church learn it and it took them 2 weeks, about 3 hours total.  We had the young women face paint war tatoos on them before the party started and THEY BOTH LOVED IT (go figure).  Once all the guests arrived and before we served the food, we kicked off the luau with the young men doing the haka.   The guests loved it EVEN MORE.   You really need a Haka.

Luau Party Planning

The All Blacks Rugby Team Ka Mate Haka

The BYU football team has performed the Ka Mate version of the haka, so do the New Zealand All Blacks rugby team — it’s one done without weapons, so it is not considered a formal Maori pre-war dance.  The Ka Mate traces its roots to the 1820s, when Te Rauparaha, the high chief of the Ngoti Toa tribe, was trying to elude his enemies. He came to one of his friends, Te Wharerangi, for help.  Te Wharerangi hid the Te Rauparaha in a leaf-covered kumara (sweet potato) pit, with Te Wharerangi’s wife sitting on top.

The words to the Ka Mate Haka are Te Rauparaha’s mutterings to himself as his enemies arrive — fearing he will die and then realizing he will live as his pursuers leave. His hairy friend, Te Wharerangi, uncovers the pit, and Te Rauparaha climbs out into the open area, without fear of capture.

Here is an easy video to learn the Ka Mate Haka.

Words to the Ka Mate Haha

Ka mate!  Ka mate!    Ka ora!  Ka ora!

Ka mate!  Ka mate!    Ka ora!  Ka ora!

Tenei te tangata puhuru huru

Nana nei i tiki mai

Whakawhiti te ra

A, upa … ne!   ka upa … ne!

A upane,   ka upane … whiti te ra!

Hey!

Phonetic Version

Kaw muh tay!   Kaw muh tay!    Kora!    Kora!

Kaw muh tay!   Kaw muh tay!    Kora!    Kora!

Tenei te tangata puhuru huru

Whakawhiti te ra

Ah  oopa … nay!     Kaw  oopa … nay!

Ah  oopa nay!     Kaw  oopa nay! … whiti te ra!

Hey!

Ka Mate Haka English translation

I die!  I die!   I live!  I live!

I die!  I die!   I live!  I live!

You’ll need a Tiki Bar

You ABSOLUTELY MUST have a Tiki Bar.  It can be as simple or as outrageous as you want, but you have to have one.  Check back soon – I’m adding the step-by-step instructions to build one.

And of course, Tiki Drinks!

We don’t drink.  And even if we did, this Luau is a family event and I wouldn’t serve drinks with the kids and teens present.  But, trust me, you don’t need alcohol for a fantastic luau.  Here are some of my favorite virgin Tiki Drinks.

Pele’s Punch

Luau Party Ideas

Serves: 30 (10 ounce) servings.  Use a 12 ounce glass and this one doesn’t need any ice.

Ingredients

  • 2 large cans of pineapple juice  (46 ounces each)
  • 2 (2 liter) bottles Hawaiian Punch Fruit Juicy Red Fruit Punch (about 8 1/2 cups)
  • 1 Liter of Ginger Ale (half a 2 liter bottle)
  • 96 oz. Orange Sherbet ice cream  (You don’t have to be exact on the amount of sherbet.  Just get roughly this amount.  NOTE: Many companies are now offering only 48 oz. of ice cream in each container. A true half gallon contains 64 fluid oz. of ice cream (measured by volume).
  • 5 gallon Igloo cooler or large glass drink dispenser
  • 30 (12 ounce) glasses

Instructions

At least 8 hours in advance, put the pineapple juice, Hawaiian Punch and Ginger Ale in the refrigerator or a cooler with ice to chill.  When ready to serve combine all ingredients in a large 5 gallon Igloo cooler or large glass dispenser.  Stir to combine the juices and ginger ale.  The sherbet will melt over time and continue to flavor and chill the punch.

Fun Luau Activities

I don’t tend to cheoreagraph parties too much.  It’s better to have a range of fun activities going on around the party area and let folks pick and choose what looks fun to them.  Here are my Proven Luau Winners.

Face Painting

Face paining is a perfect activity for your luau.  The children love it and your young women attendees can face paint your young men attendees in preparation for the Haka.

Luau Party Ideas

You’ll want to do this under a shade tent.

Outside.

Did I mention OUTSIDE?  Let me tell you what happens if it’s not outside (you can guess, can’t you?)  The kids get excited and start running around your home.  Specifically, they start running around your (brand new) beautiful (cream colored) sofas.  And naturally they have to test out the face paint sticks on your (brand new) beautiful (no longer cream colored) sofas.   Now let me tell you what fixes this.  OxiClean.  Here’s the brand new beautiful cream colored sofas after a brief date with the OxiClean.

Luau Party Ideas

You don’t EVEN want to see the ‘Before’ picture.

Back to the OUTSIDE face painting.   Just print out several of these sample pictures below to give the young women some examples.  Set up several tables and multiple chairs under a shade tent.  Purchase several sets of face paint and you’re good to go!   The kids will LOVE IT.

Hula Hop-on Mad Dash Relay

Want a fun luau party game that everyone LOVES?  This is it!   It’s simple too.  Divide the players into 2 teams.  Each team gets a full hula outfit including a grass skirt, coconut bra, lei and lovely hula girl wig.  When the referee yells go – the first member of each team has to put on the full outfit, run to a checkpoint (beachball or inflatable palm tree) and back, jump on a surf board (old ironing board decked out to look like a surf board or a plywood surfboard cut-out) and get his picture taken.   He then passes the outfit on to the next player in line who has to do the same.  The team that finishes first is the winner.   This can be played just as well in a gym or outside in the yard.

Recommended Number of Players & Teams:
2 or 3 teams

3 to 10 players per team plus 1 judge per team.  Each judge should have a camera.  Cell phone cameras work just fine.

Equipment:
One set of the following for each team:
Grass skirt

Flower Lei

Coconut bra (the more outlandish, the better – coconut monkey faces work nicely!)

Mop wig (get a Leibman mop head and dye it using Ritz dye a lovely lurid yellow or island beauty brown)

Old pair of sunglasses

“Surf board” (ironing board works just fine)

Checkpoint (beach ball or inflatable palm tree)

Set up:
Gather the clothing into piles for each team.    Set the “surf boards” about 10 feet away from each pile of clothes.

How to Play:
Divide into teams.  Line up 10 or more feet away from the pile of clothes.  When the Host yells “Go”, one team member from each team then:
1. Races to the pile of clothes
2. Puts all the clothing on and races to the check point and back
3. Hops on the “surf board” and waits for the judge to take their picture (pictures should be taken of them running too!)
5. Removes the clothing and tags the next person to complete the relay.

Winner:
The team who completes the relay first “wins”, although this one is hoot and everyone “wins” just watching it.  Folks will be clamoring for the pics.

‘Ulu Maika

Luau Party Ideas
Luau Party Ideas

ʻUlu maika is a traditional ancient Hawaiian game, similar to lawn bowling or horseshoes, requiring concentration and coordination. It was played as part of the festivities of the Makahiki season and used to demonstrate a boy’s strength and accuracy.  Similar to bowling, ‘ulu maika involves rolling disk-shaped stones (often made from basalt lava or coral and similar in size and shape to a hockey puck), down a kahua, a course of flattened ground 90 to 120 feet long. The goal was to roll the stone between two wooden pegs standing only several inches apart without hitting either one of them. Sometimes in tournaments, the aim was to see who could roll the stones the farthest.   Still played today in Hawaii to remember ancient tradition, ‘ulu maika reminds us how easy it is to create simple outdoor fun for all ages to enjoy.

‘Ulu maika is easy to play and you don’t need many materials.  Here’s a retro antique ‘Ulu maika game from the early ’60s that we’ll be using.  You can substitute a hockey puck and make a couple of sticks made from a dowel rod.

Recommended Number of Players:
2 to 10 players

Equipment:
2 stakes (15″ to 24 ” tall and about 1 ” in diameter) tapered at 1 end

Mallet to pound stakes into ground

1‘Ulu maika stone

Set up:
Placing the two wooden stakes in the ground, about 15 feet away from where the players will stand.  Start by placing the stakes about 1 yard (or meter) apart.

How to Play:
Line up the players.  Have each player roll the stone and if he’s able to roll it between the stakes he advances to the next round.  At the beginning of each round, move one of the stakes 6 inches closer to the other stake.  Eventually, your stakes should be only 6 inches apart.

Winner:
The remaining player whose stone goes through the stakes and lands the furthest distance away is the winner.
